While exploring the charming streets of Saint Simons Island, Alley and Jennifer stumbled upon a quaint coffee shop. It was there they first tasted the delightful Vegan Banana Snickerdoodle Bars. These bars left such an impression that Jennifer decided to include them in her baby shower menu as a reminder of their wonderful trip.

Authentic Recipe: Vegan Banana Snickerdoodle Bars

Ingredients:
- 2/3 cup (160g) banana, mashed (about 2 small)
- 1/3 cup (67g) coconut oil, soft but not melted
- ¼ cup + 2 tbsp (77g) granulated sugar
- ¼ cup + 2 tbsp (77g) light brown sugar
- 2 tsp (10ml) vanilla extract
- 1 ½ cups (180g) all-purpose flour
- 1 tsp (4g) baking powder
- ¼ tsp (2g) salt
- ½ tsp (1g) ground cinnamon
- ¼ tsp (0.5g) ground nutmeg
- Cinnamon Sugar Topping:
- 1 ½ tbsp (19g) granulated sugar
- 1 tsp (2g) ground cinnamon

Directions:
- Grease and line an 8” x 8” baking pan with parchment paper. Preheat the oven to 350°F.
- In a large bowl, combine mashed banana, coconut oil, and sugars. Beat until smooth and pale.
- Add vanilla, cinnamon, and nutmeg, beating until incorporated.
- Gradually mix in the flour, baking powder, and salt. The batter will be thick.
- Pour into the prepared pan, spreading evenly.
- For the topping, combine the granulated sugar and cinnamon. Sprinkle evenly over the batter.
- Bake for 25 minutes or until a toothpick comes out clean.
