Valentine Day Cupcakes
As we approach the season of love and celebration, it’s the perfect time to blend the warmth of Valentine’s Day with the joy of a baby shower. Today, I’m excited to share a delightful recipe that does just that. Inspired by my friend Alley’s love for surprises and planning for her friend Jennifer’s baby shower, these Valentine’s Day Surprise Cupcakes are not just a treat for the taste buds but also a feast for the eyes.
The Story Behind the Cupcakes
Alley, a true Valentine’s enthusiast, wanted to bring a touch of her favorite holiday to celebrate her friend Jennifer’s baby shower. With Jennifer hoping for a little girl this time, Alley thought of nothing better than to surprise her with cupcakes that embody love and anticipation – much like awaiting a new baby.

The Recipe: Valentine’s Day Surprise Cupcakes
Prep Time: 10 minutes
Cook Time: 15-18 minutes (cupcakes) / 25-28 minutes (cake)
Cool Time: 20 minutes
Total Time: 70-76 minutes
Servings: 12
Ingredients:
- 1 box of vanilla cake mix
- 1 box of red velvet cake mix
- 1 canister of strawberry frosting

- Optional – a 1/4 cup of fresh strawberries
Directions:
- Bake the Heart: Start by baking the red velvet cake as per the box instructions in a cookie sheet with a lip. Once done, let it cool in the fridge.
- Cut Out Hearts: Use a heart-shaped cookie cutter to cut out 12 mini hearts from the red velvet cake.
- Prepare the Cupcake Base: Line a cupcake tin with 12 liners. Prepare the vanilla cake mix and fill each liner a quarter full.
- Insert the Heart: Place a red velvet heart in each, marking the direction with a sprinkle.
- Complete the Cupcakes: Fill the liners until two-thirds full with more vanilla batter. Bake as instructed.
- Decorate: Once cooled, frost with strawberry frosting and add red sprinkles. Or, you can change the color of the sprinkles, if you know the sex of the baby! You could even decorate it with pink or blue, or the neutral mint green, or neutral beige colors for baby showers.
Adapting for a Baby Shower
These cupcakes, originally designed for Valentine’s Day, are easily tweaked for a baby shower. We chose pastel pink hues and baby-themed decorations to align with Jennifer’s baby shower theme, celebrating the anticipation of her little girl.
The Big Surprise
At the baby shower, the cupcakes were displayed prominently, their simple yet elegant decoration hinting at something special. As Jennifer bit into one, her delight at discovering the hidden heart was a moment to remember – a symbol of the love surrounding her upcoming arrival.
The Verdict
The cupcakes were a hit! Guests were enamored not just by the surprise element but also by the delicious combination of vanilla and red velvet, tied together by the sweet strawberry frosting.
