The Recipe: Valentine’s Day Surprise Cupcakes

Prep Time: 10 minutes
Cook Time: 15-18 minutes (cupcakes) / 25-28 minutes (cake)

Ingredients:

  • 1 box of vanilla cake mix
  • 1 box of red velvet cake mix
  • 1 canister of strawberry frosting
  • Red sprinkles
  • Optional – a 1/4 cup of fresh strawberries

Directions:

  1. Bake the Heart: Start by baking the red velvet cake as per the box instructions in a cookie sheet with a lip. Once done, let it cool in the fridge.
  2. Cut Out Hearts: Use a heart-shaped cookie cutter to cut out 12 mini hearts from the red velvet cake.
  3. Prepare the Cupcake Base: Line a cupcake tin with 12 liners. Prepare the vanilla cake mix and fill each liner a quarter full.
  4. Insert the Heart: Place a red velvet heart in each, marking the direction with a sprinkle.
  5. Complete the Cupcakes: Fill the liners until two-thirds full with more vanilla batter. Bake as instructed.
  6. Decorate: Once cooled, frost with strawberry frosting and add red sprinkles. Or, you can change the color of the sprinkles, if you know the sex of the baby! You could even decorate it with pink or blue, or the neutral mint green, or neutral beige colors for baby showers.

These cupcakes, originally designed for Valentine’s Day, are easily tweaked for a baby shower. We chose pastel pink hues and baby-themed decorations to align with Jennifer’s baby shower theme, celebrating the anticipation of her little girl.
